Yellow cake (with chia seeds)
This was my first recipe [evah!] in which I used chia seeds. I like it.
Combine a dry mixture of
- 125g flour (1c)
- 1.5 tbsp chia seeds
- 1 tsp baking powder
- 1/2 tsp salt
Then whip together a light and fluffy mixture of
- 60g softened butter (4tbsp)
- 100g sugar (1/2c)
Beat into the butter mixture
- 1 egg (70g)
- Tiny dash of vanilla
- 120ml of heavy cream (or Greek yoghurt)
- Lemon zest, but only if you wanna
Fold the wet and dry mixtures into one another until completely combined (no flour lumps!).
Bake at 180C for about 20 minutes. (But check the doneness with a toothpick. I can't tell you how long it should take to bake cause my oven is ridiculously temperamental and uneven.)
P.S. This made one 6"/15cm cake and one large cupcake (the cake for dessert, plus the cupcake for me to test my recipe right away!). The glaze I used was a simple icing sugar and lemon juice concoction that I found a bit too lemony.
